The aptly named ‘Black Tuscan’ kale is an heirloom from Tuscany, Italy. Its deep blue-green leaves are so dark that they are quite nearly black, and have the appearance of reptile skin, giving this plant its other common name of ‘Dinosaur’ kale. The leaves are richly flavored and develop a sweeter taste after growing through a frost. We enjoy clipping the baby leaves for salads and smoothies, or sautéing the mature leaves with a little garlic and lemon.
