The Dutch-originated Blue Shelling peas, also called Blauwschokkers or “blue pods” in their native tongue, are a purplish-blue pea that is well respected in both Europe and Canada. Their edible flowers are lavender and magenta in color, and the peas them- selves grow in darker purple pods. The peas can be eaten young like a snow pea, but when mature, are much tastier when shelled and dried for later use in soups.
