While it has been used and loved in Europe for millennia, borage is slowly becoming more known in the United States. This annual flowering herb has both culinary and medicinal uses. The leaves, which have a refreshing cucumber flavor, can be added to salads or made into teas. The delicate blue flowers are also commonly used in drinks or as garnishes. This hardy herb also attracts bees and other beneficial pollinating insects.
