Chicory is an excellent cover crop, with deep taproots that allow it to become drought tolerant as it matures. This plant produces pretty little purple daisy-like flowers that attract bees and other beneficial pollinating insects. Because of its deep taproots, chicory is able to pull minerals from the earth to provide a rich food source to chickens, sheep, deer, and other foraging animals, and its nutty leaves can also be added to salads for human consumption.
