Although not yet very common in America, this cold hardy leafy green has been loved throughout many parts of Europe for centuries. Also known as lamb’s lettuce, French Corn Salad produces small green leaves that have a mildly nutty flavor, not dissimilar to butterhead lettuce. This leafy green is shade tolerant, making it a a great choice for low-light areas of the garden. French Corn Salad leaves can be added to soups, but are typically best enjoyed raw in salads.
