Winter squashes are fun to grow, in part because after harvesting, you can enjoy the tasty reward for months afterwards! Green Hubbard is an heirloom acorn squash with a dark green, slightly warty skin, but hiding inside is a sweet golden-orange flesh that can be incredibly versatile in the kitchen! This squash is delicious when roasted, steamed, mashed, or baked, and also does well when canned or frozen. With so many uses, you’ll want to plant extra seeds next season!
