Named both for its size and its color, the Mammoth Red Rock cabbage is an American heirloom dating back to the 1800s. The large, round heads grow to over 5 pounds each, and the purplish hue, which indicates its high levels of beta carotene, covers each leaf down to the core. This tasty variety of cabbage is great for pickling, stir frying, slaws, or just raw eating.
