The Nu Mex College hot pepper is a mildly hot pepper that grows up to 5 inches long. When fully ripe, this pepper has bright red, glossy skin and a slightly sweet flavor, but like all peppers, can also be picked when still green. The Nu Mex College hot pepper can be added to any dish that needs a little spice, but is especially excellent when dried and ground up to make a delicious chili powder.
