Described as a cross between a cabbage and a lettuce, radicchio is an interesting and flavorful vegetable to grow. Rouge de Verona is a lovely variety of radicchio with pinkish-red leaves that are full of antioxidants and vitamins. The leaves are bitter and spicy when eaten raw in salads, but become sweeter when cooked. Try grilling quartered pieces of a radicchio head that have been brushed with olive oil!
