While this vegetable is not very well known today, it was a very popular root veggie during the Victorian era. This type of salsify, also called scorzonera or oyster plant, is a black-skinned edible root that has an earthy, almost oyster-like flavor. This intriguing plant has grassy leaves and yellow daisy-like flowers, and can be eaten and enjoyed similarly to carrots or parsnips.
