Taking its name from the University of California Davis where it was developed, the UC asparagus is one of the most popular varieties grown. The shoots are tender and sweet, especially when harvested young, and are especially delicious when roasted or grilled. This nutrient-dense vegetable takes a bit of time to harvest, though — young shoots shouldn’t be harvested until at least the second or third year.
