While not widely consumed yet in the United States, amaranth is a tasty leafy green that also produces nutrient dense seeds. White Leaf amaranth, also called Chinese spinach, is a fast growing plant in warm weather. The tender leaves can be eaten similarly to traditional spinach, but they contain even more calcium and iron than the spinach we typically eat! The seeds are a type of nutritious grain that can be eaten similarly to quinoa.
